What is Basa Fish?

The basa fish (Pangasius bocourti) is an extremely popular type of Asian catfish. The species is one of several types of pangasius. Other names for basa fish include panga, panga fish, tra, or swai.

Basa are native to Vietnam and Thailand. These unique catfish are important food fish in Asia and are a major export for both nations.

Basa has become extremely popular in many countries in recent years. In 2009, Pangasius was included on the National Fisheries Institute's "Top Ten" list of the most consumed seafood in America. In 2009, the EU imported 224,100 tonnes of pangasius from Vietnam.

Grilled Basa with Spicy Sauce

Sauce

2 tablespoons mayonnaise
2 tablespoons prepared mustard
2 teaspoons onion juice
2 teaspoons garlic juice
2 teaspoons lemon juice
2 teaspoons prepared horseradish
1/2 teaspoons liquid hot pepper sauce
1 cup margarine or butter

In a small saucepan, combine mayonnaise and mustard. Add onion juice, garlic juice, lemon juice, horseradish and liquid hot pepper sauce. Blend into a smooth mixture. Place over low heat and add margarine, a small amount at a time, stirring into mayonnaise mixture as it melts. Makes approximately 1 1/2 cups.

1 to 2 lbs. basa fillets

Coat basa fillets with salt and pepper then grill using a fish grilling sheet. Grill until fillets flake easily when tested with a fork. Remove from grill and cover fillets with sauce.
